For the chicken Caesar burgers
- 2 chicken breasts
- Olive oil
- 1 tsp minced garlic
- 2 tsp dried parsley
- Salt and black pepper, to taste
- 2 brioche burger buns
- 4 romaine lettuce leaves
- 4 rashers unsmoked bacon
- 2 slices cheese
- A squeeze of fresh lemon juice
For the parmesan truffle sweet potato fries
- Sweet potato fries
- Truffle oil, for drizzling
- Freshly grated parmesan, to taste
- Dried parsley, to taste
- Salt and black pepper, to taste
For the homemade Caesar dipping sauce
- 1 cup mayonnaise
- 1/2 cup extra virgin olive oil
- 2 anchovy fillets, finely minced
- 1 tsp minced garlic
- 1/2 tsp wholegrain mustard
- 1 tsp Worcestershire sauce
- 1/2 tsp salt
- Juice of 1/2 lemon
- 1/8 cup capers, finely chopped
- 1/4 cup grated parmesan
- Black pepper, to taste
Step by step
Method
Start by butterflying the chicken breasts to create thinner fillets. Place each fillet between two sheets of baking paper or cling film and gently flatten with a rolling pin until evenly thick.

Drizzle the chicken with olive oil, then add the minced garlic, dried parsley, salt and black pepper. Massage the seasonings into the chicken until every piece is evenly coated.

Heat a drizzle of olive oil in a frying pan over medium heat. Add the chicken fillets and cook, turning every 2-3 minutes, until golden brown on both sides and completely cooked through.

Once the chicken is cooked, place a slice of cheese over each fillet. Cover the pan with a lid for a minute or two, allowing the cheese to melt beautifully over the chicken.

Cook the unsmoked bacon until golden and crispy, then set aside ready for assembling the burgers.
Prepare your sweet potato fries according to your preferred cooking method until golden and crispy. Transfer the cooked fries to a large bowl, drizzle with truffle oil and sprinkle over freshly grated parmesan, dried parsley, salt and black pepper. Toss until evenly coated.

To make the homemade Caesar dipping sauce, add the mayonnaise to a mixing bowl. Slowly pour in the extra virgin olive oil while continuously whisking until the mixture is smooth and combined. Add the finely minced anchovy fillets, minced garlic, wholegrain mustard and Worcestershire sauce. Stir well to incorporate all the flavours.

Add the chopped capers, grated parmesan, salt, black pepper and freshly squeezed lemon juice. Mix until the sauce reaches a creamy, well-combined consistency. Taste and adjust the seasoning if needed.

To assemble the burgers, lightly toast the brioche buns if preferred. Layer the bottom halves with fresh romaine lettuce, the cheesy garlic and herb chicken, and crispy bacon. Finish with a squeeze of fresh lemon juice.

Place the tops of the brioche buns onto the burgers and gently press down to bring all the layers together. Slice each burger in half.

Spread a generous spoonful of the homemade Caesar sauce across your serving plates, then add the chicken burgers and parmesan truffle sweet potato fries. Enjoy!
