Ingredients
- Maris Piper potatoes, peeled and chopped
- Chicken stock, for parboiling
- Goose fat
- Plain flour
- Potato seasoning, to taste
- Salt and black pepper, to taste
Step by step
Method
Peel the Maris Piper potatoes and chop them into evenly sized pieces.

Add the potatoes to a saucepan and cover with water and chicken stock. Parboil for around 10 minutes, until the edges are beginning to soften, then drain thoroughly.

Gently shake the drained potatoes to rough up the edges, then add a light coating of plain flour, goose fat, potato seasoning, salt and black pepper. Toss until everything is evenly coated.

Heat goose fat in a roasting tray until piping hot. Carefully transfer the potatoes onto the tray in a single layer, then roast at 180°C until deeply golden and crisp, turning occasionally.

Once beautifully crisp and golden on the outside and fluffy in the centre, remove from the oven, season if needed and serve immediately.

Cook's tip ♡
For extra crispy roast potatoes, drain them really well, rough up the edges and dust them lightly with flour before roasting. Make sure the goose fat and roasting tray are piping hot before the potatoes go in.
