Caramelised mushrooms & onions
- 1/2 cup mushrooms, sliced
- 1 white onion, sliced
- Butter, for cooking
- 1/2 tsp granulated sugar
Chimichurri
- Fresh parsley, finely chopped
- Fresh coriander, finely chopped
- Fresh chives, finely chopped
- 2 red chillies, finely chopped
- 1 tsp chopped garlic
- 1/2 tbsp extra virgin olive oil
- 1 tsp balsamic vinegar
- 1/2 tsp lemon juice
Garlic butter ciabatta
- 1 large ciabatta loaf or 2 ciabatta rolls
- Butter, softened
- Chopped garlic, to taste
- Fresh parsley, finely chopped
- Cheese of choice, as needed
- Olive oil
- Salt
- Black pepper

Step by step
Method
Slice the mushrooms and white onion. Melt a little butter in a frying pan over low heat, then add the mushrooms, onion and sugar.

Cook the mushrooms and onions gently for 15-20 minutes, stirring occasionally, until softened, golden and lightly caramelised. Set aside.

To make the chimichurri, finely chop the parsley, coriander, chives and red chillies and add everything to a small bowl.

Add the chopped garlic, extra virgin olive oil, balsamic vinegar and lemon juice to the herbs. Stir everything together until well combined, then set aside while you prepare the sandwich.

For the garlic butter, mix softened butter with chopped garlic and finely chopped parsley until evenly combined.

Slice the ciabatta open and spread the garlic butter generously across the cut sides. Top with your cheese of choice.

Place the ciabatta into the oven until the bread is lightly toasted and the cheese has completely melted.
Pat the steaks completely dry with kitchen paper. Rub with a little olive oil and season generously on both sides with salt and black pepper.

Spread peppercorn sauce across the melted cheese on the toasted ciabatta.

Layer over the sliced steak, followed by the chimichurri and a handful of crispy homemade fries.

Top with the caramelised mushrooms and onions, fresh rocket leaves and another drizzle of peppercorn sauce.

Close the sandwich, slice into portions and serve immediately with extra homemade fries on the side.

Cook's tip ♡
Let the steak rest before slicing so the juices stay inside the meat rather than running straight into the sandwich. Keep the mushrooms and onions on a low heat too. The slower they cook, the softer and more caramelised they'll become.
