  • 1 whole chicken
  • Softened butter
  • Garlic, finely chopped or crushed
  • Wholegrain mustard
  • Honey
  • Olive oil
  • Chicken seasoning
  • Dried mixed herbs
  • Salt and black pepper, to taste
  • Fresh rosemary

Method

Make the marinade by adding the softened butter, chopped garlic, wholegrain mustard, honey, olive oil and seasonings to a bowl. Mix everything together until well combined into a thick, flavourful paste.

Place the whole chicken into a large bowl. Spoon the marinade over the chicken, then use your hands to thoroughly massage it over the skin, underneath the skin where possible and around the legs and wings until the chicken is completely coated.

Transfer the marinated chicken to a roasting tray. Make sure any remaining marinade is spread over the chicken, then add fresh rosemary before roasting.

Place the chicken into the preheated oven and roast until cooked through, allowing the marinade to caramelise and the skin to become deeply golden and crisp.

Once the chicken is deeply golden and cooked through, remove it from the oven. Leave it to rest before carving so the meat stays juicy and tender.

Carve into the rested chicken and serve while warm. The meat should be juicy and tender inside with a deeply seasoned, caramelised skin.

Cook's tip ♡

For extra juicy chicken, rub some of the garlic and mustard butter underneath the skin as well as over the outside, then allow the chicken to rest before carving so the juices can redistribute.
