Step by step
Method
Peel the potatoes and slice them into evenly sized fries.

Place the cut potatoes into cold water with ice and leave them to soak. This helps remove excess surface starch and gives the fries a crisper finish.

Drain the fries thoroughly and pat them dry before carefully cooking them in hot oil until tender inside and golden and crisp outside.

Transfer the hot fries to a lined bowl or tray. Sprinkle generously with paprika and salt, then toss until evenly coated.

Make sure the potatoes are thoroughly dry before adding them to hot oil. Any excess water can cause dangerous splattering and will also stop the fries becoming properly crisp.
