For the pasta
- Macaroni or spirali
- Vegetable stock, for boiling
For the cheese sauce
- 6 tbsp butter
- 1/3 cup plain flour
- 1/2 tsp wholegrain mustard
- 3 cups milk
- 1/2 cup double cream
- 1/2 tsp ground black pepper
- 4 tsp salt, divided and adjusted to taste
- 1 tsp cayenne pepper
- 1 tsp smoked paprika
- 1/2 tbsp Worcestershire sauce
- 5 cups freshly grated cheese, plus extra for topping (do not use pre-grated cheese)
For the garlic butter steak bites
- Steak, cut into bite-sized pieces
- Salt & pepper, to taste
- Garlic steak seasoning, to taste
- Butter
- Minced garlic

- Green beans
- Fresh parsley, chopped
Step by step
Method
Boil the macaroni or spirali in vegetable stock for around 10 minutes, then drain and set aside.

To make the cheese sauce, melt the butter in a saucepan. Stir in the plain flour and cook for 1–2 minutes, stirring continuously.

Stir the wholegrain mustard into the butter and flour mixture, then gradually whisk in the milk until smooth. Pour in the double cream and mix until combined.

Add the black pepper, Worcestershire sauce, cayenne pepper and smoked paprika. Season with salt to taste, keeping in mind the saltiness of the vegetable stock and cheese.

Gradually stir in the freshly grated cheese until completely melted and the sauce is smooth and creamy. Avoid pre-grated cheese for the smoothest sauce.

Add the cooked pasta to the cheese sauce and mix until every piece is generously coated.

Transfer the mac and cheese to a baking dish and cover the top with additional freshly grated cheese. Bake at 180°C for around 30 minutes, until golden and bubbling.

While the mac and cheese bakes, season the steak bites generously with salt, pepper and garlic steak seasoning.

Heat a frying pan until hot, then add the steak bites. Cook while turning regularly until browned on all sides and cooked to your liking.

Transfer the cooked steak bites to a bowl. Lower the heat, then add butter and minced garlic to the same pan. Cook briefly until the garlic is fragrant.

Return the steak bites to the pan and toss them through the garlic butter until beautifully coated.

Cook the green beans and toss them through the leftover garlic butter from the steak pan.
Serve the garlic butter steak bites alongside the creamy baked mac and cheese and garlic butter green beans. Finish with freshly chopped parsley and enjoy.

Cook's tip ♡
Grate your cheese fresh rather than using pre-grated cheese. Pre-grated cheese contains anti-caking agents that can prevent it from melting as smoothly into your sauce. Add the salt gradually too, as the vegetable stock and cheese will already bring saltiness to the dish.
