Fondant Potatoes♡
Golden fondant potatoes with crisp caramelised tops, buttery centres and plenty of garlic, rosemary and thyme. A classic restaurant-style potato side.

For the fondant potatoes
- Potatoes
- Olive oil
- Garlic, finely chopped
- Butter, melted
- Chicken stock
- Water
- Fresh rosemary
- Fresh thyme
- Salt, to taste
Step by step
Method
Cut the potatoes into thick circular pieces and carefully peel away the skin, keeping the pieces as even in size as possible.

Heat a little oil in a frying pan and add the potatoes. Sear until deeply golden on one side, then turn and caramelise the opposite side.

Add the chopped garlic and melted butter, then pour in the chicken stock and a little water.

Add the rosemary and thyme, then transfer the potatoes and cooking liquid to a baking tray or oven-safe dish.

Bake until the potatoes are beautifully tender and buttery in the centre, around 45 minutes.

Cook's tip ♡
Try to cut the potatoes to roughly the same thickness so they cook evenly, and don't skip the initial sear - that's what creates those gorgeous golden tops.
