For the cream cheese frosting
- 1 cup cold double cream
- 1 tub full-fat Philadelphia cream cheese, cold
- 1½ cups icing sugar, sifted
Step by step
Method
Pour the cold double cream into a large mixing bowl.

Add the cold Philadelphia cream cheese and sifted icing sugar.

Beat the ingredients together with an electric hand mixer, beginning at a low speed to prevent the icing sugar from escaping the bowl. Increase to a medium speed and continue whipping until the frosting becomes thick, smooth and firm enough to hold its shape. Take care not to overwhip it.

Use immediately to fill, cover or pipe onto completely cooled cakes. Keep the finished cake refrigerated because the frosting contains fresh cream and cream cheese.

Cook's tip ♡
Keep the double cream and cream cheese cold until you are ready to mix them. Stop whipping as soon as the frosting is firm enough to hold a peak, as overmixing can make it grainy or cause it to split.
