Homemade Cherry Compote♡

For the cherry compote
- 300g fresh cherries, pitted and roughly chopped
- ½ cup granulated sugar
- 1 tbsp fresh lemon juice
- 3 tbsp cornflour
- 2 tbsp water
- About 1 tsp vanilla extract, or to taste
Step by step
Method
Remove the stalks and stones from the cherries, then roughly chop them.

Add the cherries to a saucepan with the granulated sugar and lemon juice.

Cook over medium-low heat, stirring regularly, until the cherries release their juices and begin to soften.

In a small bowl, mix the cornflour with the water until completely smooth.

Pour the cornflour slurry into the cherries and stir continuously until the compote becomes thick and glossy.

Stir in the vanilla extract, then remove the compote from the heat and leave it to cool. It will continue to thicken as it cools.

Cook's tip ♡
Let the compote cool completely before using it between cake layers. For a looser dessert sauce, reduce the cornflour slightly or stir in a splash of water after cooling.
