- 1 cup unsalted butter, softened
- 4 1/2 cups icing sugar, sifted
- 1 1/2 cups full-fat cream cheese
- 1/2 tsp vanilla extract
- 1 tbsp lemon juice

Step by step
Method
Place the softened butter in a large mixing bowl and beat until smooth and creamy.

Add the sifted icing sugar in batches, starting the mixer on a low speed. Beat until the sugar is incorporated and the mixture is smooth, scraping down the bowl as needed.

Add the cream cheese, vanilla extract and lemon juice. Mix just until smooth and evenly combined; avoid prolonged beating once the cream cheese has been added.

Use to fill and cover completely cooled cake layers. If the frosting feels too soft to spread neatly, refrigerate briefly until firmer, then stir gently before using.

Cook's tip ♡
Use full-fat cream cheese and softened, not melted, butter. Keep the frosting and finished frosted cake refrigerated when not being served.
