Ingredients
For the tomato & red pepper soup
- 4 tomatoes
- 2 white onions
- 2 red bell peppers
- 2 garlic bulbs
- Fresh rosemary, to taste
- Olive oil, for drizzling
- Salt & pepper, to taste
- 1 cup vegetable stock
- 6 fresh basil leaves
- 2 tsp dried oregano
- 1/2 tsp chilli flakes
For serving
- Double cream, for drizzling
- Fresh basil leaves
For the grilled cheese
- 2 thick slices tiger bread
- Butter, for spreading
- 2 American-style cheese slices
- 4 sun-dried tomatoes, optional
- 4 fresh basil leaves, optional
Step by step
Method
Add the tomatoes, white onions, red bell peppers and garlic bulbs to a roasting tray. Add rosemary, drizzle generously with olive oil and season with salt and pepper.

Roast at 180°C for 45 minutes, until the vegetables are beautifully softened and roasted.

Remove the roasted vegetables from the oven and transfer them to a blender. Add the vegetable stock, fresh basil, oregano and chilli flakes.

Blend until completely smooth and creamy.

Pour the soup into bowls and finish with a drizzle of double cream and fresh basil.

For the grilled cheese, cut two thick slices from the tiger loaf and spread butter over one side of each slice.

Place the bread butter-side down in a pan over medium-high heat and toast until golden. Remove from the pan and place back onto a chopping board.

Place 2 American-style cheese slices onto the toasted side of the bread. Add the sun-dried tomatoes and fresh basil if using, then close the sandwich.

Return the sandwich to the pan and toast until both sides are golden brown. Place a lid over the pan and continue cooking until the cheese inside is completely melted.

Slice the grilled cheese and serve alongside the warm tomato and red pepper soup for dipping. Enjoy!

Cook's tip ♡
Roasting the tomatoes, peppers, onions and garlic before blending gives the soup a much deeper flavour. Keep the lid on the pan for the final stage of the grilled cheese so the cheese melts fully without over-toasting the bread.
