A soft and beautifully moist banana bread made with ripe bananas, brown sugar, cinnamon and vanilla. Delicious served by itself or used as the base for an indulgent dessert.

For the banana bread
- 3 ripe bananas
- ⅓ cup butter, melted
- ¼ cup brown sugar
- ½ cup granulated sugar
- 2 large eggs
- ½ cup milk
- 1 tsp vanilla extract
- 1½ cups plain flour
- ½ tsp ground cinnamon
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- ¼ tsp salt
Step by step
Method
Preheat the oven to 180°C. Grease and line a standard 2lb loaf tin with baking paper.

Peel the ripe bananas, place them in a large mixing bowl and mash thoroughly with a fork.

Pour in the melted butter, then add the brown sugar and granulated sugar.

Add the eggs then whisk until well combined.

Pour in the milk and vanilla extract, then whisk until the wet mixture is smooth.

Sift the plain flour into the bowl, then add the cinnamon, baking powder, bicarbonate of soda and salt.

Gently mix until the flour has just disappeared. Avoid overmixing, as this can make the banana bread dense.

Pour the batter into the prepared loaf tin and smooth the surface.

Bake for 45–50 minutes, or until the loaf is risen and a skewer inserted into the centre comes out clean or with a few moist crumbs.

Leave the banana bread in the tin for 15 minutes before transferring it to a wire rack to cool.

Cook's tip ♡
Use very ripe, heavily spotted bananas for the strongest flavour and moistest texture. Once the flour is added, mix only until everything is combined.
