Ingredients
For the lavash
- Warm water
- Sugar
- Olive oil
- Dried yeast
- Plain flour
- Extra flour, for rolling
Step by step
Method
Add the warm water, sugar, olive oil and dried yeast to a large bowl. Mix together, then leave for around 10 minutes to allow the yeast to activate.

Add the flour and begin mixing until a rough dough forms. Bring the dough together with your hands.

Knead the dough until smooth and elastic. If needed, add a small splash of olive oil while kneading to help bring everything together.

Cover the bowl and leave the dough somewhere warm until it has noticeably risen and become soft and airy.

Once risen, gently knock back the dough and divide it into evenly sized portions. Shape each portion into a smooth ball.

Dip each dough ball lightly into flour, flatten it with your hands and roll it into a thin round using a rolling pin.

Heat a dry frying pan over medium-high heat. Add one lavash and cook until bubbles begin forming across the surface, then flip and cook the other side until lightly golden. Repeat with the remaining breads.

Cook's tip ♡
Roll the lavash quite thin and keep the cooked breads stacked beneath a clean tea towel so the steam keeps them soft and flexible.
