Ingredients
For the apple filling
- 6 Pink Lady apples
- 1 tbsp lemon juice
- 1/2 cup light brown sugar
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 2 tbsp cornflour
For the crumble topping
- 1 cup plain flour
- 1/2 cup granulated sugar
- 1/2 tsp salt
- 1/2 cup butter
- 1/2 tsp vanilla extract
To serve
- Warm custard
Step by step
Method
Peel the Pink Lady apples, chop them into small cubes and transfer them to a large mixing bowl.

Add the lemon juice, light brown sugar, salt, ground cinnamon and cornflour to the chopped apples.

Mix everything together well with a spatula until the apple pieces are evenly coated in the cinnamon sugar mixture, then set aside.

In a separate mixing bowl, add the plain flour, granulated sugar and salt. Mix together until evenly combined.

Add the butter and vanilla extract to the dry ingredients. Use your hands to rub and mix everything together until a crumbly mixture forms.

Transfer the apple mixture to a baking dish and spread it into an even layer.

Sprinkle the crumble mixture evenly over the apples, making sure the apple filling is completely covered.

Bake at 190°C for 40–45 minutes, until the crumble topping is golden and the apple filling underneath is soft and bubbling.
Remove from the oven and allow the apple crumble to cool slightly before serving. Best enjoyed warm with plenty of warm custard.

Cook's tip ♡
Cut the apples into similarly sized cubes so they soften evenly as the crumble bakes. Make sure the apples are completely covered with the crumble mixture before baking for a gorgeous golden topping.
