Chewy Chocolate Chip Cookies♡
Golden chocolate chip cookies with soft, chewy centres, lightly crisp edges and plenty of chocolate chips and chunks. Made with melted butter, light brown sugar and a little cinnamon, with a freezer rest before baking.

For the cookie dough
- 3/4 cup light brown sugar
- 1/3 cup white sugar
- 3/4 cup butter, melted
- 2 tsp vanilla extract
- 1/4 cup milk
- 2 cups plain flour
- 3/4 tsp bicarbonate of soda
- 3/4 tsp salt
- 2 tsp cornflour
- 1/2 tsp ground cinnamon
- 3/4 cup chocolate chips
- 3/4 cup chopped chocolate
Step by step
Method
Add the light brown sugar, white sugar and melted butter to a large mixing bowl. Whisk until well combined. The butter should be melted but not piping hot.

Add the vanilla extract and milk, then whisk until evenly combined.

Sift in the plain flour, bicarbonate of soda and salt. Add the cornflour and ground cinnamon.

Fold the dry ingredients into the wet mixture with a spatula until a soft dough forms and no dry flour remains. Avoid overmixing.

Add the chocolate chips and chopped chocolate. Fold through until evenly distributed.

Cover the dough and place it in the freezer for at least 30 minutes, until firm enough to scoop.

Preheat the oven to 180°C and line your baking trays with baking paper. Scoop evenly sized portions of dough onto the trays, leaving generous gaps between them to allow for spreading. Keep any remaining dough cold while baking in batches.

Bake for 12–15 minutes, until the edges are lightly golden and set while the centres still look soft. Baking time will vary with the size of your cookies. Leave the cookies on the baking tray until firm enough to move, then transfer to a wire rack to finish cooling. They will firm up as they cool while keeping a soft, chewy centre.

Do not skip the freezer rest: the dough needs to firm up before baking. Take the cookies out while the centres still look soft, and let them set on the tray rather than baking until firm throughout.
